Rich Chocolate Ganache
1/2 Cup Heavy cream
8oz Milk Chocolate (chips)
1 oz (2 Tbs) unsalted butter softened
In a small saucepan, heat cream to a simmer. Place chocolate and butter in a bowl. Once cream is heated thoroughly, pour over chocolate and butter and let stand 1 minute. Mix together with spatula until creamy. If still lumpy, place in microwave for 20 seconds. Mixture might be too runny initially so let sit at room temp or refrigerate, stirring every so often until reaching the right consistency--essentially it won’t run off the macaron shell.
Cream Cheese Filling
6 oz cream cheese
6 tbs butter, softened
1/3 cup powdered sugar
1 tsp vanilla extract
1 Tbs of cream (if needed)

Using hand or stand mixer, blend all ingredients together until smooth.
Pistachio Butter Cream
1 cup butter, softened
2 1/2 cups Powdered Sugar
1/4 cup finely ground pistachios
1 tsp almond extract
Combine ingredients in a mixing bowl. Using a hand or stand mixer, whip until smooth.
Freeze Dried Fruit Buttercream: Strawberry, Raspberry, Mango, Blueberry, Banana
1 cup butter, softened
2 1/2 cups Powdered Sugar
2 Tbs powdered fruit

Place freeze dried fruit in blender to create a powder. Combine all ingredients in a mixing bowl. Using a hand or stand mixer, whip until smooth.

To assemble, pipe a circle of batter around the macaron and place a dollop of fruit preserves or curd in the center.
